A classic Junmai with an intense umami complex flavor of banana bread, nutmeg, custard, toasted nut, and mineral.
CRANE KARAKUCHI (cold or hot) (300 ML)
Karakuchi sake, a dry sake with silvery straw color, elegant with citrus, cantaloupe, caper berry, and almond aromas with a silky mouthfeel. Dryish light body and polished, brisk finish with a hint of rose.
Bulzai Ginjo (cold)
Nama-chozo sake, unpasteurized throughout the storage period and only heated at the bottling stage. Refreshing aromas of tropical fruit and rice. Light and clean finish with a hint of licorice and white pepper.
DEMON SLAYER (cold) (300 ML)
Onikoroshi sake, Honjozo style, is a very dry medium-bodied sake with tantalizing fruit flavors and a pleasant nuttiness on the mid-palate. Hints of minerals on a very dry finish.

Junmai Ginjo Nigori, left with unfiltered rice particles create a cloudy sake with a distinctive sweetness.Tropical notes of starfruit and guava hit the palate with a burst of flavor, accented by anise with a lovely melon note, finish of with a creamy and spicy texture.

Sweet Junmai Ginjo, a light, gentle brew filled with aroma of sweet rice, cherry blossoms. Soft light and elegant palate that showcases the cherry blossom, lychee, white chocolate, and natural spring water.
Manotsuru “MAHO” DAIGINJO (cold) (700 ML)
Pure, Clean perfumes of rich melon, pear, cotton candy with slight green notes. Luscious and full on the palette with a velvety texture. The elegant flavors progressively spread, culminating into an explosion of fruit with mineral finish. Deep, elegant, and complex.

Winemaker, Pascal Marty, is honored to be the only non-Japanese member. These yeasts are a true treasure of Japanese culture and allow him to vinify at much lower temperatures than regular wine yeast, which has always been a dream for winemakers. This Sauvignon Blanc presents a very new and unique profile, mixing the wonderful terroir of Chile, techniques of French vinification, and the millenary tradition of Japan.
